IKEA Swedish Meatball

IKEA Meatball.

Selalu jugak makan tapi too bad takda kat Kuantan.
Wanted to give my family rasa this meatballs kalau nak bawak dari KL macam tak fresh hahah alasan la Tiara padahal gatal tangan nak masak sendiri. Saja nak cuba.

So here is the recipe and i'd say lagi sedap sebabnya pakai ground beef yang fresh.
Kat IKEA tu rasa macam processed meat sikit frozen beef. Cuba la resepi ni nanti makan sambil nangis.




MEATBALLS:

MEATBALL INGREDIENTS

2 tablespoons olive oil (minyak biasa pun boleh cuma olive oil lagi sedap dan sihat)
1 onion, diced (bawang besar warna kuning tu ye kenkawan)
500 gram or 1 kg ground beef
1 potato
1/2 cup breadcrumbs
2 large egg yolks
1/4 teaspoon ground allspice
1/4 teaspoon ground nutmeg (nutmeg ini buah pala ye )
Salt and freshly ground black pepper and white pepper, to taste


MEATBALL INSTRUCTIONS

1) Peel and cut the potatoes into chunks. Masuk dalam periuk kecik letak air and bring to a boil. Cook the potato until fork tender and drain well. Mash the potato. Set aside until completely cool.

2) Heat 1 tablespoon olive oil in a large skillet over medium heat. Add onion, and cook, stirring frequently, until onions have become translucent, about 2-3 minutes.

3) Dalam mangkuk besar, combine ground beef, mash potato, breadcrumbs, egg yolks, allspice, nutmeg and cooked onion; season with salt and pepper, to taste. Guna wooden spoon atau tangan yang bersih, stir until well combined.

Siapa ada beef blender tu boleh pakai nanti lagi halus and smooth bila nak bentuk.

4) Roll the mixture bulat-bulatkan dia jadi meatballs, boleh dapat dalam 25 meatballs camtu.

5) Add remaining 1 tablespoon olive oil to the skillet. Tapi boleh guna pemanggang ajaib doraemon jugak eh tak pemanggang biasa je ajaib kat mana tak tau la kenapa nama dia cenggitu. Add meatballs, in batches, and cook until all sides are browned, about 4-5 minutes. Pastu i sambung bakar dalam oven to make sure dalam dia pun masak ranum omnomnom. Yang ni agak-agak jela berapa minit. Selawat pastu tadah tangan depan oven baca ayat kursi hahah.

6) Transfer to a paper towel-lined plate. Tabur white pepper sikit black pepper sikit. Done.



GRAVY:
There are actually dua cara untuk gravy yang kedua tu jenis pekat sikit:


GRAVY 1

INGREDIENTS:

1/4 cup unsalted butter
1/3 cup all-purpose flour
4 cups beef broth
3/4 cup heavy cream
Salt and freshly ground black pepper, to taste
2 tablespoons chopped fresh parsley leaves



INSTRUCTIONS:

1. To make the gravy, melt butter in the skillet.

2. Whisk in flour until lightly browned, about 1 minute.

3. Gradually whisk in beef broth and cook, whisking constantly, until slightly thickened, about 1-2 minutes.

4. Stir in heavy cream, season with salt and pepper, to taste.

5. Soy sauce sikit dalam 1 tablespoon

Stir in meatballs and cook, stirring occasionally, until heated through and thickened, about 8-10 minutes.

Serve immediately, garnished with parsley, if desired.


GRAVY 2

INGREDIENTS

2 tbs butter
1 tbs tepung gandum
1 onion - diced
2 tomatoes - diced
1 1/2 cup cold water
100 ml heavy cream or fresh milk
3 tbs tomato sauce
3 tbs sos tiram
2 tbs kicap manis
1 tbs black pepper sauce
1 tbs ground black pepper
1 chicken cube
1 tbs sugar
1 beef cube or even better beef broth buat sendiri.



INSTRUCTIONS

1. Melt the butter. Tumis bawang hingga bawang layu jangan sampai garing oke agak-agak naik bau tu cukup dah.

2. Add in tepung gandum, kacau sampai warna cokelat sikit then add in tomatoes biar je sampai tomato layu.

3. Add in cold water, fresh milk or heavy cream, sos tomato, sos tiram, kicap manis, sos lada hitam, chicken cube, beef cube, gula dan serbuk cukup rasa. Stir well and biar sampai mendidih.

4. Kena selalu kacau ye nanti dia ketul pulak tak sedap.

5. Dah siap tu tutup api biar dia suam kejap then masukkan dalam blender. Blend sampai halus. Siap.

Mango Cheesecake - Chilled

Finally!

When i eat something i love, i always feel like making it.
Especially bila bayar tu eh ini harga modal je sebenarnya omg kalau buat sendiri ni boleh makan setempayan boleh bagi orang boleh paksa orang makan haha. Dahla boleh tambah apa apa yang kita suka. 

Another feeling is when u wonder:
"Can i make this thing? Will it turn out the way i want it to be?"
You will never know if u never try it.
So people give it a shot!
Because this is among the easiest cheesecake alive!
Takyah oven pun so no more excuse oke girls alasan takda oven tu tak boleh pakai dah.


Tadaaa~



Chilled Mango Cheesecake.

BASE:

125 gm digestive biscuits
60 gm butter


Method
Mix all ingredients well. Press into base of springform tin. Chill in refrigerator.
Sebenarnya for the base ni depends on your baking pan. Agak-agak je kasi penuh satu baking pan padat-padat takyah measure in gram pun.


FILLING:

500 gm cream cheese
200 gm sugar ( i usually reduce it tak suka manis sangat. Again, depends on your tastebuds )
250 ml whipping cream
2 tbs gelatin
1/4 cup hot water
1tbs lemon juice
1tbs vanilla essence
1-2 ripe sliced mangoes
Drained and mashed mangoes (reserve the juice)


Method
1. Dissolve the gelatine in hot water. 
2. Beat the softened cream cheese until smooth. 
3. Gradually add the sugar, dissolved gelatine, vanilla essence, lemon juice and the 1/4 cup of   reserved juice. Blend well. 
4. Add some mango slices.
5. Beat whipping cream until just stiff. 
6. Fold in cream and drained fruit into cheese mixture. 
7. Pour onto prepared crumb crust. Chill until firm.




Saja letak sliced mango and fold the batter slowly.
Nanti bila makan rasa mango lagi ummph!


TOPPING:


Mash some mangoes and add some mango juice. Dissolve 1/2 tablespoon gelatine in 1/4 cup of hot water, and add any leftover juice to the gelatine solution. Be sure that the cheesecake filling has been chilled for at least 4 hours BEFORE pouring the glaze on top. Otherwise you will find that the glaze topping will just sink and destroy the aesthetics of the cheesecake.

And you can put sliced mangoes on top, susun lawa-lawa. Nipis je hiris jangan tebal kamus dewan pulak.

Keep it overnight dalam fridge tau jangan gatal letak sejam je terus nak makan tahula tak sabar.

Esok tu baru bawak keluar dari fridge.
And it's perfectly done!

Famous Amos Chocolate Chips cookies

To me, when it comes to cookies, it has to be cookies.
Not cake.
There are people who love cakey cookies - soft, cakey, not crunchy.
I called them masuk angin cookies :p
So bear in mind this is a crunchy crisp cookie recipe.

And in case my future kids get addicted to Famous Amos one day, sorry la mama tak mampu eh tiap kali pegi mall sorang hangkut 500 gram. Lagi pulak kalau anak ramai, 100 gram pun dah 9 hengget. Memang mama tinggal la kau kat situ tolong kakak Famous Amos lap pinggan. Haha.

As u know Famous Amos ada banyak jenis cookies.
Because i love chocolate, so i give this a shot. Yang lain next time pulak try.

So tadaaaaa~





Ingredients:


150g butter
100g sugar
30g brown sugar
1 egg
220g plain flour
50g corn flour
1 tsp vanilla essence
1 tsp baking soda
1/2 tsp salt
100g walnut/macedemia/almond
50g chocolate chips - i used Hershey's brand
30g cocoa powder - Hershey's

Method:
  1. Sieve flour, corn flour, cocoa powder and baking soda together, set aside
  2. Cream butter with sugar and brown sugar til creamy
  3. Add in egg and mix well
  4. Add in salt and vanilla essence
  5. Fold in the sieved flour til it forms dough and mix in the walnut (if used) and chocolate chips
  6. Spoon and drop the dough (1 heaped tsp will be the best size for me) onto a lined baking pan
  7. Bake in preheat oven at 180degC for 20 minutes
  
If u want it to be more crunchy, blend some oats and mix it together with dry ingredients. Kalau jumpa oat yang dah siap blend lagi senang.

Oreo cheesecake - Steambaked

I just dusted lebihan oreo cookies for decoration


INGREDIENTS:

Base:
30 keping oreo cookies (buang cream tengah) - kisar halus 
1/4 cawan butter - cairkan. (microwave 10 seconds)

Filling:
16 oz (2 cawan) (500 gm) cream cheese 
1/2 cawan gula halus
1/2 sudu teh esen vanila
1/2 cawan sour cream- yogurt asli oso can
2 biji telor 
1 cawan oreo - cincang halus


METHOD:Base :
Gaulkan oreo kisar dengan butter cair. Press evenly. Tekan dalam loyang yang dah grease dan dialas. Pre-heat oven - suhu 180 Celcius.

Filling:


  1. Pukul sebati cream cheese, gula and vanilla essence (medium speed) 
  2. Masukkan sour cream dan pukul sebati.
  3. Masukkan telur one by one, pukul sebati.
  4. Then masukkan oreo yang telah dicincang halus tadi, kaup balikkan hingga rata.
  5. Bakar secara "steam bake" dgn auhu 170 celsius (letak loyang adunan dalam loyang lain yang berisi air) bake for 45 minutes/hingga bahagian tengah benar2 masak.
  6. Tutup permukaan cheesecake dengan aluminium foil untuk mengelakkan permukaan terlebih kuning. Letak pd rak bawah sekali dlm oven.
  7. Sejukkan sekurang-kurangnya selama 4 jam/bermalam.

Pancake

Omnomnom
I made 9 of these with this recipe.


INGREDIENTS:
Tepung gandum 1 cawan
Baking powder 1 sudu kecik
Telur 1 biji
Gula 2 sudu
Susu segar 1 cawan

STEPS:

1) asingkan kuning telur dan putih telur
2) Pukul putih telur sampai kembang dan putih (may use fork, stir high speed)
3) Dalam bekas lain campurkan tepung gandum dengan baking powder (mix well)
4) Masukkan telur kuning, gula dan susu (mix well)
5) Masukkan tepung tadi (sift)
6) Masukkan telur putih yang telah dipukul tadi, guna cara kaup balik 
Use non stick pan if u have it
Bila nampak gelembung-gelembung buih kat bahagian atas tu boleh la terbalikkan pancake
Pour some maple syrup on top of pancake
If u dont have it, honey, chocolate syrup, jem or plain butter will do just great whatever suits u bebeh

M&M Cake



So, a welcoming cake for my lil sis.






Ingredients:
Cake - (your favorite; homemade or from a box, chocolate, vanilla, etc.)
Frosting- (your favorite; homemade or canned)
M&M's

* The amount of ingredients you'll need really depends on what size cake you are making.


Directions:
1) Bake the cake according to recipe and let cool completely.  (Vanilla cake, chocolate cake, banana cake, whatever cake u like)
Slice off the tops of the cake layers and frost the cake completely.

Ingredients for Vanilla cake











Original recipe makes 12 cupcakes or 1- 9x9 inch pan






Directions

  1. Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 9x9 inch pan or line a muffin pan with paper liners.
  2. In a medium bowl, cream together the sugar and butter. Beat in the eggs, one at a time, then stir in the vanilla. Combine flour and baking powder, add to the creamed mixture and mix well. Finally stir in the milk until batter is smooth. Pour or spoon batter into the prepared pan.
  3. Bake for 30 to 40 minutes in the preheated oven. For cupcakes, bake 20 to 25 minutes. Cake is done when it springs back to the touch.

Original recipe makes 3 cups
              





Directions

  1. In a medium bowl, cream together the cream cheese and butter until creamy. Mix in the vanilla, then gradually stir in the confectioners' sugar. Store in the refrigerator after use.







2)  Cover all around the cake with frosting.  Ideally, you'll want a 1/2  rim on the top of the cake to hold all the M&M's in place.
3)  Pour/ arrange the M&M's on the top of the cake.

I dusted some icing sugar before letak creamcheese topping, thats why putih2 sikit atas cake tu hehe.
Oh by the way, letak ice cream pun sedap tau sebab chocolate lava tu panas, bila makan ngan ice cream its like uggghhhhhh sedaaapnye. I made 6 of these! Vanilla ice cream will do just great :)
